Zucchini Terrine Recipe
Ingredients
- 4 medium zucchinis, thinly sliced lengthwise
- 1 cup ricotta cheese
- 1/2 cup grated parmesan cheese
- 2 garlic cloves, finely chopped
- 2 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1/4 cup breadcrumbs
- 1/4 cup olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Grease an 8×8 inch baking dish with some olive oil.
- In a mixing bowl, combine ricotta cheese, parmesan cheese, chopped garlic, dried basil, salt, black pepper, and eggs. Mix well.
- Place sliced zucchinis into the prepared baking dish in one layer. Season with salt and black pepper.
- Add the ricotta mixture on top of the zucchinis.
- Repeat the layers of zucchinis and ricotta mixture until you finish with the top layer of zucchinis.
- Sprinkle breadcrumbs on top.
- Drizzle olive oil on top.
- Bake for 40-45 minutes or until the top is browned and the terrine is completely cooked through.
- Let the terrine cool a bit before slicing and serving.
