Zucchini Terrine Recipe

Ingredients

  • 4 medium zucchinis, thinly sliced lengthwise
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 2 garlic cloves, finely chopped
  • 2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • 1/4 cup breadcrumbs
  • 1/4 cup olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease an 8×8 inch baking dish with some olive oil.
  3. In a mixing bowl, combine ricotta cheese, parmesan cheese, chopped garlic, dried basil, salt, black pepper, and eggs. Mix well.
  4. Place sliced zucchinis into the prepared baking dish in one layer. Season with salt and black pepper.
  5. Add the ricotta mixture on top of the zucchinis.
  6. Repeat the layers of zucchinis and ricotta mixture until you finish with the top layer of zucchinis.
  7. Sprinkle breadcrumbs on top.
  8. Drizzle olive oil on top.
  9. Bake for 40-45 minutes or until the top is browned and the terrine is completely cooked through.
  10. Let the terrine cool a bit before slicing and serving.
