Zuccotto – Regal Recipe
Ingredients:
- 1 pound sponge cake
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup unsweetened cocoa powder, sifted
- 1/4 cup dark rum
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/4 cup almonds, toasted and chopped
- 1/4 cup candied cherries, chopped
Directions:
- Cut the sponge cake into thin slices and line the bottom and sides of a 2-quart bowl, leaving a little hanging over the edge.
- In a large bowl, cream the sugar, butter and cocoa together until smooth.
- Beat in the rum.
- In a separate bowl, beat the cream until stiff and fold into the sugar mixture.
- Add the powdered sugar, almonds and candied cherries to the mixture.
- Spoon mixture into the lined bowl and press the leftover cake over the top to seal.
- Cover with plastic wrap and chill at least 8 hours or overnight.
- When ready to serve, invert onto a platter and remove bowl and plastic wrap.
- Sprinkle with extra powdered sugar, if desired.
