Anchovy Galette Recipe

Ingredients:

  • 1 cup flour
  • 1/2 cup cold butter, cut into small pieces
  • 1/4 cup ice water
  • 1/4 tsp salt
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp black pepper
  • 1 can of anchovies in oil
  • 1 tbsp chopped fresh parsley
  • 1 egg yolk
  • 1 tbsp milk

Instructions:

  1. To make the pastry, place flour, Parmesan cheese, black pepper, and salt in a food processor and pulse a few times to combine. Add the cold butter and pulse until the mixture forms small crumbles. Add ice water slowly while pulsing until the pastry comes together. Place the pastry dough in a sheet of plastic wrap and refrigerate for 30 minutes.
  2. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  3. Roll out the chilled pastry on a floured surface to a round shape of about 10 inches (25 cm).
  4. Arrange anchovy fillets in a circular pattern, leaving room around the edges. Fold the edges of the pastry up and over the anchovies, pleating the edges as you go. Brush the pastry edges with egg yolk and milk mixture.
  5. Bake the galette for 25-30 minutes or until the pastry is golden brown. Sprinkle with chopped fresh parsley before serving.
