Baked Provençal Tomatoes

Ingredients:

  • 4 large tomatoes
  • 1/2 cup panko bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh chopped basil
  • 1 tablespoon fresh chopped parsley
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Cut the tops off the tomatoes and scoop out the seeds and pulp using a spoon. Place the tomatoes in a baking dish.
  3. In a small mixing bowl, combine the breadcrumbs, Parmesan cheese, garlic, basil, parsley, olive oil, sea salt and black pepper. Spoon the mixture into the hollow centers of the tomatoes.
