Banana Speculoos Pavlova Recipe
Ingredients:
- 4 egg whites
- 1 cup caster sugar
- 1 tsp white vinegar
- 1 tsp cornflour
- 1 tsp vanilla extract
- 1/2 cup speculoos spread
- 2 ripe bananas, sliced
- Whipped cream, to serve
Instructions:
- Preheat your oven to 180°C and line a baking tray with baking paper.
- Add the egg whites to a clean, dry bowl and beat with an electric mixer until soft peaks form.
- Add the caster sugar, one tablespoon at a time, while continuing to beat the mixture until it becomes thick and glossy.
- Sift the cornflour over the mixture, add the vinegar and vanilla extract, and gently fold everything together.

- Bake for 10 minutes, then reduce the oven temperature to 150°C and bake for a further hour, or until the pavlova is crisp on the outside and soft on the inside.
- Remove the pavlova from the oven and allow it to cool completely before adding the sliced bananas to the top.
- Serve with a generous dollop of whipped cream.
