Banana Speculoos Pavlova Recipe

Ingredients:

  • 4 egg whites
  • 1 cup caster sugar
  • 1 tsp white vinegar
  • 1 tsp cornflour
  • 1 tsp vanilla extract
  • 1/2 cup speculoos spread
  • 2 ripe bananas, sliced
  • Whipped cream, to serve

Instructions:

  1. Preheat your oven to 180°C and line a baking tray with baking paper.
  2. Add the egg whites to a clean, dry bowl and beat with an electric mixer until soft peaks form.
  3. Add the caster sugar, one tablespoon at a time, while continuing to beat the mixture until it becomes thick and glossy.
  4. Sift the cornflour over the mixture, add the vinegar and vanilla extract, and gently fold everything together.
  5. Spoon the mixture onto the lined baking tray and spread it out into a large circle, making a slight indentation in the centre.
  6. Using a spoon, add the speculoos spread to the centre of the mixture and swirl it around with a skewer or knife.
  7. Bake for 10 minutes, then reduce the oven temperature to 150°C and bake for a further hour, or until the pavlova is crisp on the outside and soft on the inside.
  8. Remove the pavlova from the oven and allow it to cool completely before adding the sliced bananas to the top.
  9. Serve with a generous dollop of whipped cream.
