Blackberry turnovers – Delicious

Blackberry Turnovers Recipe

Ingredients:

  • 1 1/2 cups fresh blackberries
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 1 puff pastry sheet, thawed
  • 1 egg, beaten
  • 1 tablespoon coarse sugar

Instructions:

  1. In a small pot, combine blackberries, sugar, cornstarch, water, and vanilla extract.
  2. Cook over medium-high heat, stirring occasionally, until mixture thickens and blackberries have broken down, about 10-12 minutes. Remove from heat and let cool.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Roll out puff pastry sheet on a floured surface to about 1/8-inch thickness. Cut into 4 equal squares.
  5. Place a heaping spoonful of blackberry mixture into the center of each pastry square.
  6. Brush edges of pastry with beaten egg and fold pastry over to form a triangle, pressing edges together with a fork to seal.
  7. Brush the tops of the turnovers with beaten egg and sprinkle with coarse sugar.
  8. Bake for 20-25 minutes, until turnovers are golden brown and flaky.
  9. Let cool for a few minutes before serving.
