Breton Shortbread

Ingredients

  • 225g plain flour
  • 175g unsalted butter, softened
  • 110g caster sugar
  • 3 egg yolks
  • A pinch of salt

Instructions

  1. Preheat your oven to 180°C (160°C fan).
  2. Mix the flour, sugar and salt together in a big bowl. Add the butter and mix together with your fingers until it combines with the flour and sugar mixture and forms a dough.
  3. Add the egg yolks one at a time, mixing them in well between each addition, until a smooth dough is formed.
  4. Pat the dough into a circle about 20cm in diameter and 1cm thick and place it onto a lined baking tray.
  5. Poke the surface of the dough with the tines of a fork to create a decorative pattern, then bake in the oven for 20-25 minutes until light golden brown.
  6. Remove from the oven and allow it to cool for a few minutes before slicing into wedges.
  7. Serve either on its own or with some cream on top.
