Brioche with pralines: gourmet recipe

Brioche with Pralines

Ingredients

  • 1/2 cup milk
  • 1/4 cup granulated sugar
  • 1 sachet (2 1/4 teaspoons) active dry yeast
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 1/4 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup chopped pralines

Instructions

  1. In a small saucepan, warm the milk over low heat until it reaches about 105-115°F. Add the sugar and stir until it dissolves. Remove from the heat and sprinkle the yeast over the top of the milk mixture. Let the mixture sit for about 10 minutes, or until the yeast is frothy.
  2. In a separate bowl, whisk the eggs until they are frothy. Add the yeast mixture and whisk until combined.
  3. In the bowl of a stand mixer fitted with the dough hook attachment, mix together the flour and salt. Add the egg and yeast mixture and mix on low speed until it is fully combined. Then, increase the speed to medium and knead for about 5 minutes, or until the dough is smooth and elastic.
  4. Add the butter to the dough a few tablespoons at a time, mixing on low speed until fully incorporated. Once all of the butter has been added, increase the speed to medium and knead for another 5-7 minutes, or until the dough is smooth and shiny.
  5. Add the chopped pralines to the dough and mix until they are evenly distributed.
  6. Cover the bowl with a clean damp towel and let the dough rise in a warm, draft-free place for about 2 hours, or until it has doubled in size.
  7. Preheat the oven to 375°F. Grease a 9×5 inch loaf pan.
  8. Turn the dough out onto a lightly floured surface and knead briefly to deflate it. Shape the dough into a loaf and place it in the prepared loaf pan. Cover with a clean damp towel and let it rise again for about 30 minutes, or until it has risen above the rim of the pan.
  9. Bake the brioche for 25-30 minutes, or until it is golden brown on top and sounds hollow when tapped on the bottom.
  10. Let the brioche cool in the pan for a few minutes before removing it from the pan and transferring it to a wire rack to cool completely.
  11. Serve the brioche sliced and toasted, with a dollop of whipped cream and chopped pralines on top.
