Ingredients

  • 1 cup flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup chopped fresh tomato
  • 1/2 cup chopped fresh basil
  • 8 oz fresh mozzarella cheese, grated

Instructions

  1. Preheat the oven to 350°F. Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the vegetable oil and eggs, and mix until well combined
  4. Add the buttermilk and vanilla extract and mix thoroughly.
  5. Add the chopped tomato and basil, and mix well.
  6. Pour the batter into the prepared cake pan and sprinkle the grated mozzarella cheese over the top.
  7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan for 10 minutes. Remove from the pan and transfer to a wire rack to cool completely.
