Caprese cake (Chocolate cake) Recipe
Ingredients
- 1 cup flour
- 1 cup sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup vegetable oil
- 2 eggs
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 1 cup chopped fresh tomato
- 1/2 cup chopped fresh basil
- 8 oz fresh mozzarella cheese, grated
Instructions
- Preheat the oven to 350°F. Grease and flour a 9-inch round cake pan.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the vegetable oil and eggs, and mix until well combined
- Add the buttermilk and vanilla extract and mix thoroughly.
- Add the chopped tomato and basil, and mix well.
- Pour the batter into the prepared cake pan and sprinkle the grated mozzarella cheese over the top.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cake in the pan for 10 minutes. Remove from the pan and transfer to a wire rack to cool completely.
