Ingredients

  • 500g ceps mushrooms
  • 500ml olive oil
  • 4 cloves garlic (minced)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp fresh thyme leaves

Instructions

  1. Clean the ceps and cut them into 1 cm thick slices.
  2. Put the olive oil in a pan along with the garlic, salt, black pepper, and red pepper flakes if using.
  3. Cook over low heat for 5-6 minutes, until the garlic begins to soften.
  4. Add the ceps to the pan and stir them around to coat with the flavoured oil.
  5. Cook over medium heat for 10-15 minutes until the ceps have softened and the edges are lightly browned.
  6. Remove from the heat and add the fresh thyme leaves, stirring to combine.
  7. Let the mixture cool and then transfer it to an airtight container and store it in the fridge for up to one month.
