Ingredients

  • 16 oz (450 g) cream cheese, at room temperature
  • 1 cup (200 g) granulated sugar
  • 4 large eggs, at room temperature
  • 1/2 tsp vanilla extract
  • 1/2 cup (120 ml) heavy cream
  • 1 lime, zested and juiced
  • 1/2 cup mixed seeds (pumpkin seeds, sunflower seeds, sesame seeds)
  • 1/2 cup mixed dried fruits (raisins, apricots, cranberries), chopped
  • 18-20 vanilla wafer cookies, crushed
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup all-purpose flour

Directions

  1. Preheat the oven to 325°F (165°C).
  2. In a large bowl, beat the cream cheese and sugar until smooth and creamy with an electric mixer.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the vanilla extract, heavy cream, lime zest, and lime juice. Beat until smooth.
  5. Add 1/4 cup flour to thicken the mixture and mix well.
  6. In a separate bowl, mix the crushed vanilla wafer cookies with melted butter until combined.
