Ingredients

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 9-inch pie crusts

Instructions

  1. Preheat the oven to 425°F.
  2. In a saucepan, melt the butter over medium heat. Add the flour, salt, and pepper and stir until the mixture is smooth. Gradually stir in the chicken broth and milk and cook until the mixture is thickened and bubbly.
  3. Stir in the shredded chicken and mixed vegetables and cook for 2-3 minutes until heated through. Remove from heat.
  4. Place one pie crust in a 9-inch pie plate. Pour the chicken mixture into the pie crust. Top with the second pie crust and crimp the edges to seal. Cut a few slits on top of the pie crust to allow steam to escape.
  5. Bake for 30-35 minutes until the top is golden brown. Let the pie cool for a few minutes before serving.
