Easy Recipe

Ingredients:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs, room temperature
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup cocoa nibs
  • 1/2 cup dark chocolate, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a medium saucepan, combine water, butter, and salt. Cook over medium heat until the butter is melted.
  3. Add the flour to the saucepan, stirring constantly until the mixture forms a ball of dough. Remove it from the heat and let it cool for 2-3 minutes.
  4. Add the eggs to the dough one at a time, stirring well after each addition. The dough should be smooth and shiny.
  5. Transfer the dough to a piping bag with a large round tip. Pipe the dough onto a baking sheet lined with parchment paper, forming eclairs about 4 inches long and 1 inch wide.
  6. Bake the eclairs for 20-25 minutes or until golden brown. Remove from the oven and let them cool completely.
  7. In a mixing bowl, whip the heavy cream until it forms stiff peaks. Add the powdered sugar and vanilla extract and continue whipping until well combined.
  8. With a sharp knife, cut the top of each eclair and stuff them with the whipped cream using a pastry bag. Sprinkle with cocoa nibs.
  9. Melt the dark chocolate in the microwave or on the stove. Drizzle over the eclairs.
  10. Refrigerate the chocolate eclairs for 30 minutes to an hour before serving.
