Chocolate Pop Cakes: Snack for Children

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 24 lollipop sticks
  • Candy melts or chocolate chips for melting

Instructions:

  1. Preheat the oven to 350°F.
  2. In a medium bowl, sift together flour, cocoa powder, baking powder, baking soda and salt.
  3. In a separate large mixing bowl, beat sugar, oil, eggs and vanilla until combined.
  4. Add the dry ingredients to the wet mixture in three parts, alternating with milk and mix until just combined.
  5. Line a mini muffin pan with paper liners. Using a cookie scoop or spoon, fill each muffin cup two-thirds full.
  6. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
  7. While the pop cakes cool, melt your choice of candy melts or chocolate chips according to instructions on package.
  8. Insert a lollipop stick into each pop cake and dip into the melted chocolate. Wipe off any excess chocolate and place on a sheet of wax paper to cool and harden.
  9. Serve when completely hardened.
