Chocolate-zucchini Cake Recipe
Ingredients:
- 2 cups shredded zucchini
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups granulated sugar
- 3/4 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions:
- Preheat the oven to 350°F (180°C). Grease a 9-inch (23 cm) round cake pan.
- Place the shredded zucchini in a clean kitchen towel and squeeze out the excess moisture.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until combined.
- Add the dry ingredients to the wet ingredients and whisk until just combined.
- Fold in the shredded zucchini and chocolate chips.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
