Chocolate-zucchini Cake Recipe

Ingredients:

  • 2 cups shredded zucchini
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease a 9-inch (23 cm) round cake pan.
  2. Place the shredded zucchini in a clean kitchen towel and squeeze out the excess moisture.
  3. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  4. In a large bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until combined.
  5. Add the dry ingredients to the wet ingredients and whisk until just combined.
  6. Fold in the shredded zucchini and chocolate chips.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
