Pumpkin and Mango Entremets

Ingredients:

  • 1 cup pumpkin puree
  • 1 cup mango puree
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 tablespoon gelatin powder
  • 1/4 teaspoon ground cinnamon

Instructions:

  1. In a large bowl, mix together the pumpkin puree and ground cinnamon until well combined.
  2. In a separate bowl, mix together the mango puree and set aside.
  3. In a small saucepan, mix together the sugar and water. Cook over medium heat until the mixture starts to thicken.
  4. Add the gelatin powder to the sugar mixture and stir until fully dissolved.
  5. Remove from heat and pour the sugar mixture into the pumpkin puree mixture. Mix until fully combined.
  6. In a separate bowl, whisk the heavy cream until it forms stiff peaks.
  7. Add the whipped cream into the pumpkin mixture and gently fold until well combined.
  8. Take 4 small serving glasses. Add 1 tablespoon of the mango puree at the bottom of each glass.
  9. Pour the pumpkin mixture on top of the mango puree, filling the glasses about 3/4 of the way full.
  10. Add another tablespoon of mango puree on top of the pumpkin mixture in each glass.
  11. Cover with plastic wrap and chill in the refrigerator for at least 2 hours, or until set.
  12. Serve chilled and enjoy!
