Citrus Tart Recipe

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/3 cup powdered sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 2 egg yolks
  • 1 tbsp ice water
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 1/2 cup granulated sugar
  • 3 tbsp unsalted butter, softened
  • 2 large eggs
  • 1 large egg yolk
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/4 cup powdered sugar

Instructions:

  1. Preheat oven to 375°F.
  2. In a food processor, pulse the flour, powdered sugar, and salt together until combined.
  3. Add the butter and pulse until the mixture resembles coarse sand.
  4. Add the egg yolks and pulse until the dough just begins to come together.
  5. Add the ice water and pulse until the dough forms a ball.
  6. Press the dough into a 9-inch tart pan and prick the bottom with a fork.
  7. Bake the crust for 15-20 minutes, or until lightly golden brown. Set aside to cool.
  8. Meanwhile, make the filling. In a medium saucepan, combine the orange juice, lemon juice, granulated sugar, and butter.
  9. Bring the mixture to a boil over medium-high heat, stirring to dissolve the sugar and melt the butter.
  10. In a bowl, whisk together the eggs, egg yolk, salt, vanilla extract, and powdered sugar until smooth.
  11. Add a few tablespoons of the hot juice mixture to the egg mixture, whisking constantly to temper the eggs.
  12. Slowly pour the egg mixture into the saucepan with the remaining juice mixture, whisking constantly.
  13. Reduce the heat to medium-low and cook, stirring constantly, for about 10 minutes or until the mixture thickens slightly.
  14. Remove the pan from the heat and strain the mixture through a fine mesh sieve into a bowl.
  15. Pour the filling into the cooled tart shell and bake for 15-20 minutes or until the filling is set and slightly browned on top. Allow to cool to room temperature before serving.
