Clea’s Berry Scones Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 2/3 cup buttermilk
  • 1/2 cup mixed fresh berries
  • 1 egg, beaten
  • 2 tablespoons coarse sugar

Instructions

  1. Preheat oven to 425°F (218°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda and salt.
  3. Add in the butter and use a pastry blender or your fingers to work it into the flour mixture until it resembles coarse crumbs.
  4. Add buttermilk and mixed fresh berries, lightly stir with a fork until everything looks moistened and no flour bits remain in the bottom of the bowl. Do not overwork the dough.
  5. Transfer the dough to a lightly floured surface. Lightly knead the dough, folding it over itself a few times, until it comes together into a ball. Then, flatten it out into a circle that’s about 1 inch thick.
  6. With a sharp knife or a bench scraper, cut the dough into 8 even wedges. Alternatively, you can use a biscuit cutter to make rounds.
  7. Transfer scones onto the prepared baking sheet. Brush the top of each scone with the beaten egg, and sprinkle with coarse sugar.
  8. Bake for 16 to 18 minutes, or until the scones turn golden brown and set in the center. Remove from oven and cool on wire racks for a few minutes before serving.

Serving Suggestions

These berry scones are best served warm out of the oven. You can enjoy them as is or serve them with whipped cream or jam. A cup of tea or coffee would pair perfectly with these scones.
