Clea’s Dried Fruit Bars Recipe

Ingredients:

  • 2 cups mixed dried fruit (ex: apricots, dates, raisins, figs)
  • 1 cup chopped nuts (ex: almonds, cashews, pecans)
  • 1/2 cup honey
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

Instructions:

  1. Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the mixed dried fruit and chopped nuts.
  3. In a separate small saucepan, heat the honey, coconut oil, vanilla extract, cinnamon, and salt together over medium heat until the mixture is thin and syrupy.
  4. Pour the honey mixture over the dried fruit and nut mixture and stir to combine.
  5. Transfer the mixture to the lined baking pan and press down firmly to pack it together.
  6. Bake for 20-25 minutes, or until golden brown on top.
