Ingredients:
- 1 pie crust (homemade or store-bought)
- 1 cup of milk
- 1/2 cup of heavy cream
- 1/4 cup of granulated sugar
- 2 eggs
- 1 teaspoon of vanilla extract
- Assorted fresh fruit (strawberries, blueberries, kiwi, etc.)
- 1/4 cup of apricot preserves
Instructions:
- Preheat the oven to 375°F.
- Press the pie crust into a 9-inch tart pan. Bake for 10-12 minutes, or until lightly golden.
- In a medium-sized saucepan, heat the milk, heavy cream, and sugar over medium heat. Stir until the sugar dissolves.
- In a separate bowl, whisk the eggs and vanilla together.
- Slowly pour the hot milk mixture into the egg mixture, whisking constantly.
- Pour the mixture back into the saucepan and heat over medium heat until it thickens, stirring constantly. Remove from heat and let cool for a few minutes.
- Pour the custard into the cooled tart shell and smooth it with a spatula.
- Arrange the fresh fruit on top of the custard in any pattern you desire.
- In a small bowl, microwave the apricot preserves until melted. Brush the melted preserves on top of the fruit to create a glossy finish.
- Refrigerate for at least an hour before serving.
