Ingredients

  • 1 cup strong brewed coffee
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Combine the brewed coffee and heavy cream in a medium saucepan and heat over medium-low heat until it begins to steam, about 5 minutes.
  2. Add the sugar and stir until it dissolves completely.
  3. Remove from heat and stir in the vanilla extract.
  4. Let the mixture cool to room temperature.
  5. Pour the mixture into popsicle molds and freeze for at least 6 hours, or overnight.
  6. To remove the popsicles from the mold, run the mold under warm water for a few seconds and gently pull on the popsicle stick.
