Coffee Ice Cream Recipe

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 5 egg yolks
  • 2 tablespoons instant coffee granules
  • Pinch of salt

Instructions:

  1. In a medium saucepan, combine heavy cream, whole milk, sugar, instant coffee granules, and salt.
  2. Heat the mixture over low heat, stirring occasionally, until the sugar is dissolved and the coffee is fully dissolved.
  3. In a small bowl, whisk egg yolks.
  4. Gradually, add a cup of hot mixture to the egg yolks, whisking constantly to avoid curdling the eggs.
  5. Add the egg mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
  6. Remove the saucepan from heat and let it cool for 30 minutes.
  7. Transfer the mixture to a blender and blend until smooth
  8. Transfer the mixture to a container and freeze for at least 4 hours, stirring every hour or so to prevent ice crystals.
  9. Scoop and serve the coffee ice cream.
