Cottage Cheese, Tomato-Strawberry Coulis and Dried Fruits

Ingredients:

  • 1 cup cottage cheese
  • 1 cup fresh strawberries
  • 1 cup cherry tomatoes
  • 1/4 cup maple syrup
  • 1/4 cup dried cranberries
  • 1/4 cup dried apricots, chopped
  • 1/4 cup almonds, chopped
  • 2 tbsp. olive oil
  • Salt and pepper

Instructions:

  1. Preheat the oven to 375°F.
  2. Line a baking sheet with parchment paper. Spread the cherry tomatoes and strawberries on the sheet, drizzle with olive oil, and sprinkle with salt and pepper.
  3. Bake for 15-20 minutes, or until the fruit is soft and slightly caramelized.
  4. Remove and let cool for a few minutes.
  5. Meanwhile, in a small saucepan, heat the maple syrup over medium heat until it comes to a simmer.
  6. Add the roasted tomatoes and strawberries to the saucepan and cook for 5-10 minutes, or until the fruits have liquified.
  7. Remove from heat and let cool for a few minutes.
  8. In a bowl, add the cottage cheese and drizzle the tomato-strawberry coulis on top. Sprinkle the chopped dried fruits and almonds on top.
