Crayfish Flans and Coriander Sauce Recipe

Ingredients:

  • 500g crayfish tails, shelled and deveined
  • 4 eggs
  • 1/2 cup heavy cream
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 cup chopped fresh coriander
  • 1/4 cup mayonnaise
  • 2 tbsp lemon juice

Instructions:

  1. Preheat the oven to 180°C.
  2. In a pot of boiling water, cook the crayfish tails for 2-3 minutes until they turn red. Drain and cool.
  3. Cut the crayfish tails into small pieces and distribute them evenly into 6 greased ramekins or muffin cups.
  4. In a mixing bowl, whisk the eggs, heavy cream, salt, black pepper and cayenne pepper until well combined.
  5. Pour the egg mixture over the crayfish in the ramekins or muffin cups.
  6. Bake the flans in the preheated oven for 20-25 minutes until they are set and golden brown on top.
  7. In another mixing bowl, whisk the chopped coriander, mayonnaise and lemon juice until well combined.
  8. Serve the crayfish flans hot with a dollop of coriander sauce on top.
