Crayfish Flans and Coriander Sauce Recipe
Ingredients:
- 500g crayfish tails, shelled and deveined
- 4 eggs
- 1/2 cup heavy cream
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/4 cup chopped fresh coriander
- 1/4 cup mayonnaise
- 2 tbsp lemon juice
Instructions:
- Preheat the oven to 180°C.

- Pour the egg mixture over the crayfish in the ramekins or muffin cups.
- Bake the flans in the preheated oven for 20-25 minutes until they are set and golden brown on top.
- In another mixing bowl, whisk the chopped coriander, mayonnaise and lemon juice until well combined.
- Serve the crayfish flans hot with a dollop of coriander sauce on top.
