Crème brûlée with Pralines Recipe

Ingredients:

  • 1 cup heavy cream
  • 1 cup half-and-half
  • 1/2 cup granulated sugar
  • 5 egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pralines
  • Extra granulated sugar for topping

Instructions:

  1. Preheat your oven to 325°F (165°C).
  2. In a saucepan, heat the heavy cream, half-and-half and sugar over medium heat while frequently stirring. Continue heating till the sugar completely dissolves.
  3. In a bowl, lightly beat the egg yolks and vanilla extract together with a whisk or fork.
  4. Slowly add the hot cream mixture to the egg yolks while whisking continuously.
  5. Add the chopped pralines to the egg mixture and stir well.
  6. Place six ramekins in a roasting pan. Pour the mixture into the ramekins. The ramekins should be evenly filled and only 3/4 full.
  7. Pour hot water in the pan to reach halfway up the sides of the ramekins. Put the tray in the oven. Bake for 25-30 minutes or until the centers of the crème brûlée are set.
  8. Take a baking dish and line it with parchment paper. Place the baked crème brûlée ramekins on it. Allow them to cool at room temperature for 5-10 minutes.
  9. Place the ramekins on a flat base and refrigerate them for up to three hours.
  10. Once the crème brûlée is set, take it out of the fridge, sprinkle some granulated sugar on top making sure it’s evenly spread and blowtorch the tops to caramelize the sugar layer.
  11. Serve your crème brûlée with pralines immediately.
