Dark Chocolate Terrine

Ingredients:

  • 1 pound of dark chocolate, chopped into small pieces.
  • 1 cup of heavy cream.
  • 3 tablespoons of unsalted butter.
  • 1/4 cup of granulated sugar.
  • 1/4 cup of water.
  • A pinch of salt.

Directions:

  1. Line a 9 inch loaf pan with parchment paper, leaving some overhang so you can easily remove the chocolate later.
  2. Place the chopped chocolate in a large heatproof bowl and set aside.
  3. In a small saucepan, combine the heavy cream, butter, sugar, water and salt. Cook over medium heat, stirring occasionally, until the mixture comes to a boil and the sugar has dissolved completely.
  4. Pour the boiling cream mixture over the chopped chocolate. Let the mixture sit for 2-3 minutes to allow the chocolate to melt completely.
  5. Using a whisk, stir the mixture until it’s smooth and shiny.
  6. Pour the chocolate mixture into the prepared loaf pan and smooth the surface with a spatula.
  7. Cover the pan with plastic wrap and refrigerate for at least 6 hours or overnight, until the chocolate is completely set.
  8. To serve, remove the chocolate terrine from the loaf pan by pulling up with the parchment paper overhang. Slice into thin pieces and serve chilled.
