Dorayaki Recipe – Japanese Sweet Red Bean Pancake
Ingredients:
- 1 cup all-purpose flour
- 2/3 cup granulated sugar
- 1 tsp baking powder
- 2 eggs
- 1/2 cup milk
- 1/2 tsp vanilla extract
- 1 cup sweetened red bean paste (anko)
Directions:
- In a large bowl, sift together flour, baking powder, and 1 tablespoon of sugar.

- Remove the pancake from the pan and repeat the process with the remaining batter.
- To make the dorayaki, spread about 2 teaspoons of sweetened red bean paste onto one pancake, and top it with another pancake to make a sandwich.
- Serve the dorayaki warm or at room temperature.
