Dorayaki Recipe – Japanese Sweet Red Bean Pancake

Ingredients:

  • 1 cup all-purpose flour
  • 2/3 cup granulated sugar
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1 cup sweetened red bean paste (anko)

Directions:

  1. In a large bowl, sift together flour, baking powder, and 1 tablespoon of sugar.
  2. In another bowl, whisk together eggs, milk, vanilla extract, and 2-3 tablespoons of water.
  3. Add the wet mixture to the dry ingredients and mix until well combined and smooth.
  4. Heat a non-stick pan over medium-low heat. Spoon 2 tablespoons of batter onto the center of the pan and spread it evenly into a circle.
  5. Cook the pancake for 1-2 minutes or until the surface of the pancake is bubbly and the edges are dry. Flip the pancake and cook for another 1-2 minutes until golden brown.
  6. Remove the pancake from the pan and repeat the process with the remaining batter.
  7. To make the dorayaki, spread about 2 teaspoons of sweetened red bean paste onto one pancake, and top it with another pancake to make a sandwich.
  8. Serve the dorayaki warm or at room temperature.
