Dry Franc-Comtoises Recipe
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cubed and chilled
- 1/2 cup shredded Comte cheese
- 1/2 cup water
- 1/2 teaspoon salt
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the flour and salt.
- Add the chilled butter to the bowl and mix with your fingers until pea-sized crumbles form.
- Add the shredded Comte cheese and mix to combine.
- Add water and mix until the dough comes together.
- Dust a clean working surface with flour and knead the dough for a minute or two, until it becomes smooth.
- Roll the dough to 1/4 inch thickness, then cut into desired shapes using a cookie cutter.
- Place the cutouts on a baking tray lined with parchment paper and bake for 20-25 minutes, or until lightly browned.
- Remove from the oven and let them cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
