Dry Franc-Comtoises Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cubed and chilled
  • 1/2 cup shredded Comte cheese
  • 1/2 cup water
  • 1/2 teaspoon salt

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the flour and salt.
  3. Add the chilled butter to the bowl and mix with your fingers until pea-sized crumbles form.
  4. Add the shredded Comte cheese and mix to combine.
  5. Add water and mix until the dough comes together.
  6. Dust a clean working surface with flour and knead the dough for a minute or two, until it becomes smooth.
  7. Roll the dough to 1/4 inch thickness, then cut into desired shapes using a cookie cutter.
  8. Place the cutouts on a baking tray lined with parchment paper and bake for 20-25 minutes, or until lightly browned.
  9. Remove from the oven and let them cool on the tray for 10 minutes before transferring to a wire rack to cool completely.

Verdict:

These dry franc-comtoises are easy to make and have a wonderful nutty flavor thanks to the shredded Comte cheese. They are perfect for a party or as a snack with a glass of wine.
