Endive Gratin with Cheese Recipe

Ingredients

  • 6 endives, trimmed and halved lengthwise
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon freshly grated nutmeg
  • 1 cup grated Gruyere cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Blanch the endives in a large pot of boiling salted water for 2 to 3 minutes. Drain and arrange in a single layer in a gratin dish or ovenproof baking dish.
  3. Melt the butter in a medium saucepan. Whisk in the flour and cook over low heat for 2 minutes, stirring occasionally.
  4. Gradually whisk in the milk and cook over moderate heat, whisking constantly, until thickened, about 5 minutes.
  5. Remove the saucepan from the heat and add the salt, pepper, nutmeg, and 1/2 cup of the Gruyere cheese. Whisk until the cheese is melted and the sauce is smooth.
  6. Pour the cheese sauce over the endives and sprinkle with the remaining 1/2 cup of Gruyere cheese.
  7. Bake for 30 to 35 minutes, until the endives are tender and the cheese is golden brown and bubbly.
