Fennel and Pea Velouté Recipe

Ingredients:

  • 2 tablespoons unsalted butter
  • 1 onion, finely chopped
  • 1 fennel bulb, finely chopped
  • 1 garlic clove, minced
  • 2 cups chicken or vegetable broth
  • 2 cups fresh or frozen peas
  • 1/4 cup heavy cream
  • Salt and pepper, to taste

Instructions:

  1. Melt butter in a large pot over medium heat. Add onion and cook until softened.
