Fennel, Oranges and Bulgur with Citrus Vinaigrette

Ingredients:

  • 1 cup bulgur
  • 2 cups water
  • 1 large fennel bulb, trimmed and thinly sliced
  • 2 oranges, segmented
  • 1/4 cup freshly squeezed orange juice
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • salt and pepper to taste
