Fig Cake Recipe

Ingredients:

  • 12-15 fresh figs, chopped
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup whole milk

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch baking pan with butter or cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, and baking soda.
  3. In a separate large mixing bowl, beat the butter and sugar with an electric mixer until light and fluffy, for about 2-3 minutes. Scrape down the sides of the bowl as needed.
  4. Add the eggs, vanilla extract, and salt to the butter mixture and mix again until fully combined and smooth. Gradually add the dry ingredients and alternate with the milk. Stir until just combined, scraping down the sides of the bowl as needed.
  5. Gently fold in the chopped figs, reserving a few for decoration.
  6. Pour the batter into the prepared pan and smooth the surface with a spatula. Arrange the remaining fig pieces on top for decoration.
  7. Bake the cake for 45–50 minutes, until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan for a few minutes before removing it to a cooling rack. Serve warm or at room temperature.
