Financier with Coconut, Meringue and Currants Recipe

Ingredients:

  • 1/2 cup all-purpose flour
  • 1/2 cup grated coconut
  • 1/2 cup white sugar
  • 1/2 cup powdered sugar
  • 5 large egg whites, beaten
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, melted
  • 1/2 cup dried currants
  • 1/2 cup sliced almonds

Instructions:

  1. Preheat oven to 375°F (190°C). Grease and flour a Financier pan.
  2. In a large mixing bowl, combine flour, grated coconut, white sugar and powdered sugar. Mix well.
  3. Add beaten egg whites and vanilla extract to the flour mixture. Mix well until just combined.

  9. Serve with a dollop of whipped cream or vanilla ice cream on top.
