Fluffy Pumpkin and Cream Cheese Muffin Recipe

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (15 oz) can pumpkin puree
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup milk

Instructions:

  1. Preheat oven to 375°F (190°C). Grease muffin cups or line with muffin liners.
  2. In a large bowl, whisk together flour, sugar, pumpkin spice, baking soda, and salt.
  3. In a separate bowl, whisk together pumpkin puree, eggs, oil, and vanilla extract.
  4. Pour the pumpkin mixture into the flour mixture and stir until just combined.
  5. In a small bowl, beat the cream cheese until smooth. Add powdered sugar and milk and beat until well combined.
  6. Spoon the muffin batter into the prepared muffin cups, filling each about 2/3 full.

  8. Bake for 20-25 minutes or until a toothpick inserted in the center of the muffin comes out clean.
  9. Cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
