Ingredients:

  • 4 ripe apricots, pitted and halved
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup amaretti cookies, crushed
  • Vegetable oil, for frying
  • Amaretti ice cream, for serving
  • Optional garnish: chopped pistachios, honey

Instructions:

  1. In a bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, whisk together the milk and egg.
