Fruit and Chocolate Nougat

Ingredients:

  • 1 cup of honey
  • 1 cup of granulated sugar
  • 1/2 cup of corn syrup
  • 1/4 cup of water
  • 2 egg whites
  • 1/4 teaspoon of salt
  • 1/2 cup of chopped mixed dried fruit (apricots, cranberries, figs, and cherries)
  • 1/2 cup of chopped dark chocolate

Instructions:

  1. Line an 8×8 inch baking pan with parchment paper and set aside.
  2. In a medium saucepan, combine honey, sugar, corn syrup, and water. Cook the mixture over medium heat until a candy thermometer reads 250°F (120°C).
  3. In a separate bowl, beat egg whites and salt until stiff peaks form.
  4. Slowly pour the hot syrup into the egg whites and beat until well combined and the mixture is thick and glossy.
  5. Add mixed dried fruit and chopped dark chocolate to the mixture and stir until well combined.
  6. Pour the mixture into the prepared pan and smooth the top with a spatula.
  7. Let the nougat cool completely before removing it from the pan. Cut it into bite-sized squares or bars.
