Funny Lardo di Colonnata Ravioli with Porcini Mushrooms

Ingredients:

  • 1 pack of fresh pasta sheets
  • 1 cup of porcini mushrooms, sliced
  • 1 small onion, chopped
  • 3 cloves of garlic, minced
  • 3 tablespoons of butter
  • 1/4 cup of Lardo di Colonnata, diced
  • 1/4 cup of heavy cream
  • 1/4 cup of freshly grated Parmesan cheese
  • Salt and pepper, to taste

Instructions:

  1. Begin by preparing the filling. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  2. Add the sliced porcini mushrooms to the skillet, and sauté until they are soft and fragrant. Add salt and pepper to taste, and set aside.
  3. Prepare the pasta sheets according to package directions. Cut the sheets into equal-sized squares, and place a small spoonful of the mushroom mixture into the center of each square. Top each with a few pieces of Lardo di Colonnata.
  4. Using a pastry brush, brush the edges of the pasta squares with water. Then fold each square over to form a triangle, and press the edges together to seal.
  5. Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes, or until they float to the surface of the water.
  6. In a separate skillet, melt 1 tablespoon of butter over medium heat. Add the cooked ravioli to the skillet, and toss gently to coat in the butter. Add the heavy cream and grated Parmesan cheese, and gently stir until the cheese is melted and the sauce is creamy.
  7. Season with salt and pepper to taste, and serve immediately.
