Gizzard Salad: Fall Recipe

Ingredients:

  • 1 lb of gizzards, cleaned and trimmed
  • 1 cup of kale, finely chopped
  • 1/2 cup of crumbled feta cheese
  • 1/4 cup of chopped walnuts
  • 1/2 cup of diced apples
  • 1/4 cup of chopped red onion
  • 2 tbsp of apple cider vinegar
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions:

  4. In a small mixing bowl, whisk together the apple cider vinegar, olive oil, salt, and pepper. Pour over the salad and mix well.
  5. Refrigerate the gizzard salad for at least 30 minutes before serving.
