Goat Cheese and Zucchini Bagel Recipe

Ingredients

  • 1 bagel, sliced in half
  • 2 oz goat cheese
  • 1 small zucchini, sliced thinly
  • 1 tbsp olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F.
  2. In a small bowl, mix together goat cheese, garlic powder, salt, and pepper until combined.
  3. Spread goat cheese mixture on each half of the bagel.
  4. In a separate bowl, toss zucchini slices with olive oil, salt, and pepper.
  5. Place the zucchini slices on top of the goat cheese on each bagel half.
  6. Bake in the preheated oven for 10-15 minutes or until zucchini is tender and bagel is crispy.
