Goat Cheese and Zucchini Bagel Recipe
Ingredients
- 1 bagel, sliced in half
- 2 oz goat cheese
- 1 small zucchini, sliced thinly
- 1 tbsp olive oil
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F.
- In a small bowl, mix together goat cheese, garlic powder, salt, and pepper until combined.
- Spread goat cheese mixture on each half of the bagel.
- In a separate bowl, toss zucchini slices with olive oil, salt, and pepper.
- Place the zucchini slices on top of the goat cheese on each bagel half.
- Bake in the preheated oven for 10-15 minutes or until zucchini is tender and bagel is crispy.
