Goji Berry Scones
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup dried goji berries
- 2/3 cup heavy cream
- 1 egg, whisked
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Add chilled butter to the dry mixture and use a pastry cutter or your fingers to work the butter into the flour mixture until the mixture is crumbly. Make sure to leave some pea-sized chunks of butter for maximum flakiness.
- Stir in the dried goji berries.
- In a separate bowl, whisk together heavy cream and egg. Gradually pour the wet mixture into the dry mixture while stirring until dough forms.
- Turn the dough onto a floured surface and shape it into 7-inch circle. Cut the dough into 8 evenly sized triangles.
- Transfer the scones onto the baking sheet.
- Bake for 20-25 minutes or until golden brown.
- Remove from the oven and let them cool on the baking sheet for a few minutes before serving.
