Gourmet Mishmash Recipe

Ingredients:

  • 1 lb. boneless, skinless chicken breast, chopped into bite-sized pieces
  • 1 lb. peeled and deveined shrimp
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz.) diced tomatoes, drained
  • 1 can (14 oz.) tomato sauce
  • 2 tbsp. olive oil
  • 1 tsp. paprika
  • 1 tsp. dried thyme
  • Salt, to taste
  • Pepper, to taste
  • Cooked rice, for serving

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Saute the onion and garlic for 2-3 minutes, until the onion is translucent.
  3. Add the chicken, bell peppers, paprika and thyme. Cook until the chicken is browned on all sides, stirring occasionally.
  4. Add the shrimp to the skillet and cook for 2-3 minutes, until pink and cooked through.
  5. Reduce the heat to medium-low and add the diced tomatoes and tomato sauce to the skillet.
  6. Simmer for 5-10 minutes, until the sauce has thickened slightly and the flavors have blended together. Season with salt and pepper to taste.
