Ingredients:

  • 6 egg yolks
  • 3/4 cup white sugar
  • 2/3 cup milk
  • 1 1/4 cups heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 pound mascarpone cheese
  • 1/4 cup strong brewed coffee, cooled
  • 2 tablespoons rum
  • 24 ladyfingers
  • 1 tablespoon unsweetened cocoa powder

Directions:

  1. In a medium saucepan, whisk together egg yolks and sugar until well blended. Whisk in milk and cook over low heat, stirring constantly, until mixture thickens and coats the back of a spoon. Remove from heat and allow to cool.
  2. In a large bowl, beat cream and vanilla until stiff peaks form. Fold in mascarpone cheese until smooth.
  3. In a small bowl, mix together coffee and rum. Dip ladyfingers in coffee mixture and arrange in a single layer in a 9×13 inch dish.
  4. Spoon half of the mascarpone mixture over the ladyfingers. Repeat with another layer of ladyfingers and remaining mascarpone mixture.
  5. Refrigerate for at least 2 hours or overnight.
  6. Sprinkle cocoa powder over the top of the tiramisu just before serving.
