Gourmet Verrine Recipe

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can of chickpeas
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • salt and black pepper to taste
  • 2 avocados, mashed
  • 2 tbsp lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup crumbled feta cheese

Directions:

  1. In a medium saucepan, bring quinoa and water to boil. Reduce heat to low and simmer, covered, until quinoa is tender and water is absorbed, about 20 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until onion is translucent, about 5 minutes.
  3. Add bell pepper and zucchini and cook until vegetables are tender, about 10 minutes.
  4. Drain and rinse chickpeas and add them to the skillet. Add cumin, smoked paprika, oregano, salt and black pepper and stir well.
  5. In a small bowl, mix avocado with lime juice and cilantro.
  6. To assemble the verrines, divide quinoa between 4 glasses or jars. Top with the chickpea mixture, followed by the avocado mixture. Sprinkle with crumbled feta cheese.
