Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped

Directions:
- In a medium saucepan, bring quinoa and water to boil. Reduce heat to low and simmer, covered, until quinoa is tender and water is absorbed, about 20 minutes.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until onion is translucent, about 5 minutes.
- Add bell pepper and zucchini and cook until vegetables are tender, about 10 minutes.
- Drain and rinse chickpeas and add them to the skillet. Add cumin, smoked paprika, oregano, salt and black pepper and stir well.
- In a small bowl, mix avocado with lime juice and cilantro.
- To assemble the verrines, divide quinoa between 4 glasses or jars. Top with the chickpea mixture, followed by the avocado mixture. Sprinkle with crumbled feta cheese.
