Ingredients:

  • 1 cup green lentils, rinsed and drained
  • 4 cups vegetable broth

  • 2 celery stalks, diced
  • 1 bay leaf

  • Chorizo sausage, diced

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and sauté until they are soft and fragrant, 3-5 minutes.
  3. Add the carrots and celery and continue to sauté for another 5 minutes.
  4. Add the lentils, bay leaf, thyme, smoked paprika, cumin, and red pepper flakes, and stir well.
