Half-Raw Half-Cooked Endives with Chorizo Recipe

Ingredients

  • 4 endives
  • 1 chorizo sausage
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut off the endive stems and slice them in half lengthwise.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the endives and cook for 5-7 minutes, until they start to brown.
  4. Slice the chorizo sausage and add it to the skillet together with the minced garlic. Cook for 3-4 minutes, until the sausage is slightly crispy.
  5. Mix the honey and apple cider vinegar in a small bowl. Pour the mixture over the endives and chorizo and toss to coat.
  6. Transfer the skillet to the oven and bake for another 5-7 minutes, until the endives are soft but still slightly crispy.
