Hazelnut Shortcrust Pastry Recipe

Ingredients:

  • 250g plain flour
  • 125g unsalted butter, cubed
  • 65g hazelnuts, finely chopped
  • 1 egg yolk
  • 1-2 tbsp cold water
  • Pinch of salt

Method:

  1. Preheat your oven to 180°C (160°C fan or gas mark 4).
  2. Place the flour, salt and cubed butter into a bowl and rub together using your fingertips until the mixture resembles breadcrumbs.
  3. Add the finely chopped hazelnuts to the mixture and stir well.
  4. Add the egg yolk and 1-2 tablespoons of cold water to the mixture and stir until it forms a dough. Don’t overwork the dough.
  5. Roll the dough out on a lightly floured surface to the desired thickness and use it to line a greased 20cm tart tin.
  6. Trim the edges and prick the base of the pastry all over with a fork.
  7. Bake the pastry in the preheated oven for 12-15 minutes or until lightly golden.
  8. Remove the pastry from the oven and allow it to cool completely before filling it with your desired filling.
