Homemade Tarama Recipe

Ingredients:

  • 1/2 cup bread crumbs
  • 1/2 lb. smoked cod roe
  • 1 garlic clove, minced
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. Place the bread crumbs in a bowl and cover them with cold water. Let them soak for about 10 minutes.
  2. Meanwhile, remove the skin and any membranes from the smoked cod roe and place it in a food processor.
  3. Add the lemon juice and minced garlic to the food processor and blend until smooth.
  4. Gradually add the olive oil while the food processor is running, until the mixture becomes creamy. You may need to add a little more oil if the mixture is too thick.
  5. Squeeze the water from the bread crumbs and stir them into the tarama mixture. Season with salt and pepper to taste.
  6. Cover and refrigerate the tarama for at least an hour to allow the flavors to blend.
  7. Serve the tarama chilled with pita bread or crackers.
