Homemade Violet Marshmallow Recipe
Ingredients:
- 3 tablespoons gelatin powder
- 1 cup cold water
- 2 cups granulated sugar
- 2/3 cup corn syrup
- 1/2 cup water
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 1 and 1/2 teaspoons violet extract
- Powdered sugar for dusting
Directions:
- Line a 9-inch square pan with parchment paper and dust it with powdered sugar. Set aside.
- In a large mixing bowl, sprinkle gelatin powder over 1 cup of cold water. Let it sit for 10 minutes to bloom.
- In a medium saucepan, combine sugar, corn syrup, water, and salt. Cook over medium heat, stirring occasionally until sugar dissolves.
- Attach a candy thermometer and continue cooking without stirring until the mixture reaches 240°F (116°C).
- Remove from heat and slowly pour it over the bloomed gelatin mixture while whisking continuously, until all sugar syrup is added.
- Beat the mixture with a mixer on high speed for 8-10 minutes, until the mixture becomes thick and glossy. Add vanilla extract and violet extract, beat for an additional 2-3 minutes until well combined.
- Immediately pour the mixture into the prepared pan and dust the top with powdered sugar.
- Let marshmallows set for at least 4 hours, or overnight, until they become firm and springy.
- Dust a clean work surface with powdered sugar and carefully invert the marshmallow from the pan onto the work surface.
- Remove the parchment paper and dust the other side with powdered sugar as well.
- Cut marshmallows into small squares using a sharp knife dusted with powdered sugar, and toss them in more powdered sugar.
- Store in an airtight container at room temperature for up to 1 week.
