Japanese Cheesecake
Ingredients:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 8 oz. cream cheese, softened
- 6 large eggs, separated
- 1/4 teaspoon cream of tartar
- 1/4 cup all-purpose flour
- 1/4 cup cornstarch
- 1/4 cup whole milk
- 1 teaspoon pure vanilla extract
Instructions:
- Preheat oven to 325°F.

- Stir in the milk and vanilla extract until smooth and well combined.
- Fold ⅓ of the egg whites into the batter until well combined.
- Add in remaining egg whites and fold until mixture is smooth, but be careful to not overmix.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake your Japanese cheesecake in the preheated oven for 50-60 minutes until the outside is golden brown and the center is slightly jiggly.
- Remove from the oven and let cool to room temperature before removing the cake from the pan.
- Refrigerate the cheesecake for at least 1 hour before serving.
