Japanese Cheesecake

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 8 oz. cream cheese, softened
  • 6 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 cup whole milk
  • 1 teaspoon pure vanilla extract

Instructions:

  1. Preheat oven to 325°F.

  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy.

  7. Gradually add the cream of tartar to the egg whites and continue to beat on high speed until stiff peaks form.
  8. Combine the flour and cornstarch in a bowl then sift them into the cream cheese mixture, and mix until just combined.
  9. Stir in the milk and vanilla extract until smooth and well combined.
  10. Fold ⅓ of the egg whites into the batter until well combined.
  11. Add in remaining egg whites and fold until mixture is smooth, but be careful to not overmix.
  12. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  13. Bake your Japanese cheesecake in the preheated oven for 50-60 minutes until the outside is golden brown and the center is slightly jiggly.
  14. Remove from the oven and let cool to room temperature before removing the cake from the pan.
  15. Refrigerate the cheesecake for at least 1 hour before serving.
